Those delicate shortbread cookies are made with ground almonds and flavored with natural vanilla bean. The cookies are made thin with a puffed, hard, frosted top. Almond cookies have the perfect crunch when you bite into one. They can be a little messy if they crumble and they're sweet but not too sweet that you can't eat a ridiculous amount of them in a sitting (I had probably 8 in the hour they came out of the oven, oops). The almond cookies, though, have always been at the top of my list. Very much ahead of the holiday season, I wanted to learn to make almond cookies. So, I spent an afternoon with my husband, who taught me how. Now, we are well prepared for upcoming X-mas. :-)
